Work

As an apprentice, you’ll work at a company and get hands-on experience. You’ll gain new skills and work alongside experienced staff.

What you’ll do at work

  • We will teach all aspects of being a Chef, from kitchen discipline, how to behave in the kitchen, how to present yourself, cleanliness and personal hygiene.
  • We will teach you basic knife skills, foundation knowledge of cookery which can be applied to all cuisines - not just Italian.
  • You will be learning basic cooking techniques, grilling, stewing, frying and steaming etc.
  • Once reached a certain level you will be learning how to work, prepare and run a busy section by assisting a Chef De Partie.
  • Eventually, we would look to give you some time on your own on sections and covering for Chef De Parties.

Course contents
  • Check, prepare, assemble, cook, regenerate, hold and present food meeting the needs of the customers and maintaining organisational standards and procedures.
  • Use kitchen tools and equipment correctly to produce consistently high quality dishes according to specifications.
  • Take responsibility for the cleanliness, organisation and smooth running of the work area.
  • Produce dishes to suit individuals’ specific dietary, religious and allergenic  needs as required.
  • Operate within all regulations, legislation and procedural requirements.
  • Complete and maintain documentation to meet current legislative guidelines.
  • Use effective methods of communication with all colleagues, managers and customers to promote a positive image of yourself and the organisation.
  • Work in a fair and empathetic manner to support team members while offering a quality provision.
  • Work to ensure customer expectations are met.
  • Work collaboratively to uphold the vision, values and objectives of the organisation.
  • Use technology appropriately.
  • Maintain quality and consistency in food production by using resources in line with organisations’ financial constraints, style, specifications and ethos.
  • Identify own learning style, personal development needs and opportunities and take action to meet those needs.
  • Use feedback positively to improve performance. 

Your training plan

Full induction and ongoing training and mentoring with the Head Chef, Training will cover all aspects of food hygiene, health and safety in the kitchen etc. Apprentices will also have an allocated College Assessor who will make regular visits to the restaurant and conduct on-site training as well as conduct three-way reviews to ensure momentum and progress.

Desirable qualifications

GCSE or equivalent in:

  • English (grade 3)
  • Maths (grade 3)

Other requirements

We are based right in the northern quarter of Lord Street in Southport, very close to local amenities. We have a team of 9 kitchen staff - all friendly and welcoming and all work well as a team. Your Apprentice Manager will be Head Chef Jason Maimone who is keen and eager to build a team for the future and has a passion to produce great chefs and give them the best possible start and an opportunity to thrive in this career.

About this company

We are a family run authentic Italian restaurant. We have been in business since 2007 and have always taken great pride in cooking with fresh ingredients and doing things the correct way. We have recently expanded our restaurant from 35 covers to 80+ covers and have a brand new state of the art kitchen. We are looking to expand our kitchen team with motivated individuals who want to pursue this as a career and aspire to be chefs in future. We are hoping to produce some great talent through our now well equipped kitchen, with hopes to build a kitchen team for the future.
