Summary

The successful candidate will assist and learn from the chefs to prepare the food as per the menu, maintaining the quality with minimal wastage. The apprentice and team will be using a clean as you work philosophy, so the kitchen is compliant with Health and Safety regulations.

Work

As an apprentice, you’ll work at a company and get hands-on experience. You’ll gain new skills and work alongside experienced staff.

What you’ll do at work

Ferma Bistro is a cosy, unique bistro set in the heart of Ripley, serving contemporary British small sharing plates using all local & sustainably sourced produce from our farm shop right next door.

Ferma are looking for an enthusiastic Apprentice Commis Chef to join the team.

Some experience as a Kitchen Porter or equivalent would be an advantage, but no previous experience is required. However, the suitable candidate must be passionate about food and eager to begin a career in the hospitality and catering industry.

As an Apprentice Commis Chef, you will be:

  • Assisting in the food preparation process
  • Cooking and preparing elements of high quality dishes
  • Preparing vegetables, meats and fish
  • Assisting other Chefs
  • Helping with deliveries and restocking
  • Assisting with stock rotation Cleaning stations
  • Contributing to maintaining kitchen and food safety standards

At Ferma Farm Shop & Bistro, you will be working towards your Production Chef Level 2 Apprenticeship Qualification over the course of 12-18 months. You will be fully supported by both your Manager and Learning Coach, and be given all the help and guidance you need to begin building a rewarding career for yourself in the hospitality and catering industry.

What your apprenticeship includes:

  • A blend of virtual and in person meetings with your Learning Coach every 4-6 weeks.
  • A hands on, practical approach to learning to ensure you are able to achieve your goals.
  • On the job and off the job training.
  • Functional skills in Maths and English (if you haven't already achieved your GCSEs)

  • Check, prepare, assemble, cook, regenerate, hold and present food meeting the needs of the customers and maintaining organisational standards and procedures.
  • Use kitchen tools and equipment correctly to produce consistently high quality dishes according to specifications.
  • Take responsibility for the cleanliness, organisation and smooth running of the work area.
  • Produce dishes to suit individuals’ specific dietary, religious and allergenic  needs as required.
  • Operate within all regulations, legislation and procedural requirements.
  • Complete and maintain documentation to meet current legislative guidelines.
  • Use effective methods of communication with all colleagues, managers and customers to promote a positive image of yourself and the organisation.
  • Work in a fair and empathetic manner to support team members while offering a quality provision.
  • Work to ensure customer expectations are met.
  • Work collaboratively to uphold the vision, values and objectives of the organisation.
  • Use technology appropriately.
  • Maintain quality and consistency in food production by using resources in line with organisations’ financial constraints, style, specifications and ethos.
  • Identify own learning style, personal development needs and opportunities and take action to meet those needs.
