Summary

We are looking for a passionate & dedicated Apprentice Chef to join our dynamic kitchen team! You’ll work closely with our experienced chefs, honing your culinary skills while assisting in food preparation, cooking & plating. This role is perfect for someone eager to learn, grow & take the first step toward a rewarding career in the culinary arts.

Annual wage
£17,680 a year

Wage Range: £8.50 to £11.50 dependant on age and apprentice level.

Number of Hours: up to 40 hours including weekends/shifts Lunch 10:00am to 3pm and Dinner 5:30pm to 10pm Wednesday to Saturday Lunch 12 to 3pm Dinner 5.30pm to 9pm, Sunday Lunch 12 to 4pm soon to be 7 days /week.

Work

As an apprentice, you’ll work at a company and get hands-on experience. You’ll gain new skills and work alongside experienced staff.

What you’ll do at work

• Assisting in the basic preparation of ingredients (chopping, peeling, washing vegetables etc.) under the guidance of senior chefs.

• Supporting chefs in cooking, preparing sauces, garnishes & assembling dishes.

• Keeping the kitchen area clean & sanitized, following hygiene & food safety standards.

• Properly storing & labelling food items in refrigerators, freezers & storage areas.

• Continuously learning new techniques from senior chefs to develop cooking skills.

• Assisting with inventory management, checking supplies, and reporting

• Practicing knife techniques to improve speed & accuracy.

• Minimizing food wastage by careful portioning & using leftovers creatively.

• Preparing workstations for the shift by arranging necessary tools, ingredients & equipment.

• Helping with plating & garnishing dishes before they are served to customers.

  • Contribute to reviewing and refreshing menus in line with business and customer requirements
  • Use technology for the development and production of dishes and menu items in line with business procedures and guidelines to achieve the best result
  • Check food stocks, report on shortages, prioritise food that is close to expiry and keep the storage areas in good order
  • Prioritise tasks, ensuring food items meet the required quality standard and in the required time frame
  • Measure dish ingredients and portion sizes accurately
  • Use a range of craft preparation and basic cooking skills and techniques to prepare, cook and finish dishes and menu items in line with business requirements
  • Use correct knives and knife skills when preparing food and use the correct equipment when preparing, cooking and finishing food
  • Correctly store and use food items and commodities when preparing, cooking and finishing dishes to deliver a quality product that is safe for the consumer
  • Apply correct preparation and selection methods when using fresh produce in dishes
  • Complete preparation and cooking tasks to a high standard, delivered on time and presented as described within the recipe specification
  • Maintain a clean and hygienic kitchen environment at all times, complete kitchen documentation as required
  • Work with others to ensure dishes produced are of high quality, delivered on time and to the standard required
  • Choose methods of communication that achieve effective team working
  • Develop own skills and knowledge through training and experiences
  • Deal with team challenges and problems constructively to drive a positive outcome
  • Effectively manage resources to meet specifications and control waste
  • Follow safe systems of work reporting risks in the appropriate manner

    Other requirements

    Ideally own transport required. We are located in the village of Mortimer West End, which is about a 20 minute’s walk from the train station of Mortimer. There is no public transport to Mortimer West End. We have a staff resting room, should this be required during the day, and we can arrange transportation to the station in the evening after your shift, if required.

We have recently acquired the Red Lion Mortimer, on the Berkshire Hampshire boarder, via Hall & Woodhouse. Our vision is to operate a quintessential country pub, serving fresh produce, including game, as shot by our own gamekeepers, fish and British pub classics, which we produce onsite.
