Summary
We are a Bed & Breakfast with dining offered 3 evenings a week. We are also an events and wedding venue, catering for up to 50 covers. We are a small team and you will have a key role to play while you train. You will get to experiance many different types of catering and cuisine and have the opportunity to progress as your training continues.

You will start on a standard apprentiship wage however as you become more valuable to the buisness and progress through the different apprenticeship levels your wages where possible will be adjusted to reflect this.

You will be expected to work five days per week. This will include weekend work. Breakfast shifts start at 7.00am. Dinner shifts are usually finished by 9.00pm but very occasionally run later. You will need to be flexible to undertake this role.

Work
As an apprentice, you’ll work at a company and get hands-on experience. You’ll gain new skills and work alongside experienced staff.
What you’ll do at work
- Prepare, cook and serve a selection of dishes
- Clean, tidy and look after the hygiene of the kitchen and equipment
- Complete records as required
- Complete their training and portfolio and keep it up to date
- Perform reasonable duties in line with the smooth running of the hotel and business as a whole, as required

- Contribute to reviewing and refreshing menus in line with business and customer requirements
- Use technology for the development and production of dishes and menu items in line with business procedures and guidelines to achieve the best result
- Check food stocks, report on shortages, prioritise food that is close to expiry and keep the storage areas in good order
- Prioritise tasks, ensuring food items meet the required quality standard and in the required time frame
- Measure dish ingredients and portion sizes accurately
- Use a range of craft preparation and basic cooking skills and techniques to prepare, cook and finish dishes and menu items in line with business requirements
- Use correct knives and knife skills when preparing food and use the correct equipment when preparing, cooking and finishing food
- Correctly store and use food items and commodities when preparing, cooking and finishing dishes to deliver a quality product that is safe for the consumer
- Apply correct preparation and selection methods when using fresh produce in dishes
- Complete preparation and cooking tasks to a high standard, delivered on time and presented as described within the recipe specification
- Maintain a clean and hygienic kitchen environment at all times, complete kitchen documentation as required
- Work with others to ensure dishes produced are of high quality, delivered on time and to the standard required
- Choose methods of communication that achieve effective team working
- Develop own skills and knowledge through training and experiences
- Deal with team challenges and problems constructively to drive a positive outcome
- Effectively manage resources to meet specifications and control waste
- Follow safe systems of work reporting risks in the appropriate manner

Your training plan
- The training will primarily take place at Cley Windmill but may on occasion include Picnic fayre. You may on occasion be asked to attend training at premisis outside of our business, for example at a designated HIT training event.

Other requirements
We are based on the North Norfolk coast and while there is a bus service during the day you will need to be able to get yourself to and from work outside of standard working hours. Reliablity is of the upmost inportance.
About this company
Cley Windmill is a 228 year old, five-storey corn mill on the North Norfolk coast. We have ten rooms both inside and outside of the mill and a shop just down the road. Our clients are a mixture of local, returning and first time visitors. We pride ourselves on offering a personal and unique service, whether you are staying in one of our rooms, a guest at a wedding or have just popped in for something to eat. Our team consists of approximately 20 staff depending on the time of the year and most of these have been with us for a long time.
