Summary

This is an exciting new role in an established college kitchen. Mentored by our Head Chef, you will complete an apprenticeship and assist in with the daily operation of the kitchen whilst ensuring that the college’s reputation for excellent food quality is upheld.

Monday to Friday as rostered, will include some evening shifts and potential weekend cover if required. Shifts TBC. 37.5 hours per week to include some time for college work.

Work

As an apprentice, you’ll work at a company and get hands-on experience. You’ll gain new skills and work alongside experienced staff.

What you’ll do at work

Main Responsibilities & Duties:

  • Assist in preparing, cooking and serving food, ensuring the timely provision of high-quality and optimum quantities of food
  • Ensure that the preparation, cooking and presentation of food meets the highest standards
  • Ensure that all food has been presented and garnished in line with the menu
  • Ensure adherence to the organisation’s Food Safety and Health & Safety policies at all times
  • Maintain the College’s standard of personal hygiene so that there is no risk of contamination of food
  • Assist with taking delivery and safe storage of deliveries along with kitchen porters
  • Ensure that high standards of customer service are maintained at all times
  • Make sure that everything is locked up and unnecessary electrics are turned off on leaving (hotplates, lights etc).
  • Ensure stock, deliveries and wastage are all checked and recorded in line with company and food standards
  • Have a flexible approach to working hours when possible to ensure college business is not compromised

The above is not an exhaustive list of duties. The post-holder may be asked to take on different tasks as required and all employees are expected to work collaboratively to support the overall work of the college.

Course contents
  • Check, prepare, assemble, cook, regenerate, hold and present food meeting the needs of the customers and maintaining organisational standards and procedures.
  • Use kitchen tools and equipment correctly to produce consistently high quality dishes according to specifications.
  • Take responsibility for the cleanliness, organisation and smooth running of the work area.
  • Produce dishes to suit individuals’ specific dietary, religious and allergenic  needs as required.
  • Operate within all regulations, legislation and procedural requirements.
  • Complete and maintain documentation to meet current legislative guidelines.
  • Use effective methods of communication with all colleagues, managers and customers to promote a positive image of yourself and the organisation.
  • Work in a fair and empathetic manner to support team members while offering a quality provision.
  • Work to ensure customer expectations are met.
  • Work collaboratively to uphold the vision, values and objectives of the organisation.
  • Use technology appropriately.
  • Maintain quality and consistency in food production by using resources in line with organisations’ financial constraints, style, specifications and ethos.
  • Identify own learning style, personal development needs and opportunities and take action to meet those needs.

    Duration: 12 - 14  months

    Career prospects: Progress on to Level 3 Senior Chef Apprenticeship in Production Cooking, into a Chef de Partie role, or Senior Production Chef role.

    Underpinned by a series of interactive online workshops, this apprenticeship combines personal development and performance with culinary skills including latest techniques for the preparation, cooking, regeneration and presentation of food. Training is provided under the guidance of our team and by your mentor, the Head Chef. 

    During this apprenticeship, you’ll:

    • Maintain excellent standards of personal, food and
      kitchen hygiene
    • Ensure compliance to procedures, menu specifications
      and recipes
    • Produce food which meets portion controls and budgets
    • Adapt and produce dishes to meet special dietary,
      religious and allergy requirements
    • Follow, complete, and maintain production schedules,
      legislative and quality standard documentation
    • Use specialist kitchen equipment
    • Communicate internally and externally with customers
      and colleagues
    • Commit to personal development activities

    Requirements

    Essential qualifications

    GCSE or equivalent in:

    • English (grade 3)
    • Maths (grade 3)

    There may be a option for the role to be made permanent at the end of the apprenticeship for the right candidate and if the College business permits.
