Summary

The opportunity to work in a very successful kitchen alongside some of the best chefs in Worcestershire and hone your skills as a chef in a supportive environment. We are offering an Apprenticeship Commis Chef position, and upon the completion of the course you will automatically be offered a full time Commis Chef position in our Kitchen.

8 hours off the job. 32 hours on the job over 4 days between Monday and Sunday. Shifts will be 10am-9pm Monday to Friday with a 2 hour break between 3pm and 5pm. Saturday's are 10am till 10pm with a 2 hour break and Sunday's are 10am till 5pm.

Work

As an apprentice, you’ll work at a company and get hands-on experience. You’ll gain new skills and work alongside experienced staff.

What you’ll do at work

Preparation of fresh ingredients under the instruction of the Head or Sous chef
Preparing and presenting high quality dishes
Maintain hygiene standards
Rotate through different sections of the kitchen until you are confident and proficient in all
Provide support to senior chefs throughout the day

Course contents
  • Contribute to reviewing and refreshing menus in line with business and customer requirements
  • Use technology for the development and production of dishes and menu items in line with business procedures and guidelines to achieve the best result
  • Check food stocks, report on shortages, prioritise food that is close to expiry and keep the storage areas in good order
  • Prioritise tasks, ensuring food items meet the required quality standard and in the required time frame
  • Measure dish ingredients and portion sizes accurately
  • Use a range of craft preparation and basic cooking skills and techniques to prepare, cook and finish dishes and menu items in line with business requirements
  • Use correct knives and knife skills when preparing food and use the correct equipment when preparing, cooking and finishing food
  • Correctly store and use food items and commodities when preparing, cooking and finishing dishes to deliver a quality product that is safe for the consumer
  • Apply correct preparation and selection methods when using fresh produce in dishes
  • Complete preparation and cooking tasks to a high standard, delivered on time and presented as described within the recipe specification
  • Maintain a clean and hygienic kitchen environment at all times, complete kitchen documentation as required
  • Work with others to ensure dishes produced are of high quality, delivered on time and to the standard required
  • Choose methods of communication that achieve effective team working
  • Develop own skills and knowledge through training and experiences
  • Deal with team challenges and problems constructively to drive a positive outcome
  • Effectively manage resources to meet specifications and control waste
  • Follow safe systems of work reporting risks in the appropriate manner

    Other requirements

    Whilst we are a small business, we are running a fairly large country pub and we can get extremely busy. We have a high turn over of customers, serving up to 120 people on a Friday or Saturday night and therefore it is a very high pressure environment. We uphold very high standards and you will be expected to maintain quality and professionalism throughout.

    About this company

    We are a family run gastro pub in the picturesque village of Hanley Swan. We serve an A La Carte menu Monday to Saturday made up of high quality, freshly prepared dishes. On a Sunday we serve a traditional Sunday roast as well as vegan and vegetarian options. We are a close knit team and value the supportive and friendly environment we have built.

    After this apprenticeship

    Commis Chef on completion of their apprenticeship with the opportunity to move up to CDP and/or to specialise in a particular section of the kitchen, for example pastry.
