Summary

Seeking an enthusiastic Apprentice Chef to join our team. The successful applicant will assist in food prep in all areas - meat, fish, vegetable. They will prepare and make pastries, desserts, sandwiches and snacks. Assist with food service and plating up and there could be opportunity for creative input into menu design and recipe ideas welcomed.

Monday - Sunday. Non work days to be agreed. Work at weekends expected. Shifts are split shifts as follows - 10.00am - 3.00pm and 5.30pm - 9.00pm. With regulatory breaks each day, usually coinciding with shift work.

Work

As an apprentice, you’ll work at a company and get hands-on experience. You’ll gain new skills and work alongside experienced staff.

What you’ll do at work

Day to day role responsibilties include:

  • Follow instruction from head Chef and established members of the team
  • Prepare food from fresh ingredients as instructed, including meat, fish and vegetables
  • Prepare and make pastries, desserts, sandwiches and snacks
  • Follow recipes as directed
  • To serve desserts to high standard
  • Assist with food service and plating up 
  • To assist in cleaning down the kitchen, including preparation areas
  • To be fit to work
  • To be adaptable
  • To arrive punctually on agreed days

Course contents
  • Check, prepare, assemble, cook, regenerate, hold and present food meeting the needs of the customers and maintaining organisational standards and procedures.
  • Use kitchen tools and equipment correctly to produce consistently high quality dishes according to specifications.
  • Take responsibility for the cleanliness, organisation and smooth running of the work area.
  • Produce dishes to suit individuals’ specific dietary, religious and allergenic  needs as required.
  • Operate within all regulations, legislation and procedural requirements.
  • Complete and maintain documentation to meet current legislative guidelines.
  • Use effective methods of communication with all colleagues, managers and customers to promote a positive image of yourself and the organisation.
  • Work in a fair and empathetic manner to support team members while offering a quality provision.
  • Work to ensure customer expectations are met.
  • Work collaboratively to uphold the vision, values and objectives of the organisation.
  • Use technology appropriately.
  • Maintain quality and consistency in food production by using resources in line with organisations’ financial constraints, style, specifications and ethos.
  • Identify own learning style, personal development needs and opportunities and take action to meet those needs.

  • Your training plan

    • The apprentice will be working towards the Level 2 Production Chef Apprenticeship Standard
    • College attendance will be at the Colchester Institute - Colchester Campus one day per week during term time

    Essential qualifications

    GCSE or equivalent in:

    • Maths and English (grade A*-E/9-2)

    Desirable qualifications

    Other in:

    • Food Safety Level 2 (grade Pass)

    Other requirements

    Due to our location, we would prefer someone who lives locally or can travel via reliable transport. Having a Food Safety Level 2 certificate is also desired.

    About this company

    We are a family run hotel on the river front at Burnham-on-Crouch. It is a 17th century inn with 15 letting rooms. We have a large dining room and food is served throughout the bars and in the summer all on the Quay and our private jetty. We are busy in winter and very busy in the summer. It is in an idyllic location and the town and our business is growing.

    Opportunity to lead into chef de parties / commis chef / further education. Full time work may be available here for the right person also.
